Journey to the Mediterranean

Combining the local products that surround us and having a Mediterranean influence in our cuisine, full of colours and flavours becomes truly rewarding for our well being and health. This is our style of cooking and we are so excited to show what’s cooking in our kitchen and we hope you can enjoy it as much as we do.

WHAT YOU MAY FIND IN OUR MEDITERRANEAN DIET

Vegetables, legumes, fruits and cereals are the base of our meals. As well for dairy products, fish, poultry, meat and without a doubt, to compliment our meals we use olive oil and wine. Olive oil is a must have in our cuisine, as well for garlic, onions, herbs and spices. Herbs and spices add flavour and aroma to each dish we make, reducing the need to add salt. Our cereal is whole grain, such as rice and our rustic yellow corn bread that goes so well with fresh vegetable soup. The simplicity of each soup full of fresh, rich vegetables opens the appetite to the main dish that may be served with meat or fish. To end this perfect meal, we complete it with fresh raw fruit or/and a delicious dessert.

FOOD OVER A WOOD BURNING OVEN

I couldn’t have asked for more, when we visited my Uncle Jaime at his home. He had created a beautiful space in his backyard that was an inspiration of our grandfather’s backyard back home in Europe. It was without a doubt, breathtaking and magical. He had built a wood burning oven and a place where we could cook right over an open fire. It brought back many memories while we placed the Sardines over the fire along with the bell peppers and garlic bread. A large pot with potatoes and carrots were placed over the open fire and we simply enjoyed watching it cook and come together, while drinking a glass of wine and eating hot toasted garlic bread, taken out of the wood burning oven. We enjoyed every moment.
