Roasted Cherry Tomatoes Sauteed String Beans

Going into my Dad’s garden is always so overwhelming. There is so much to chose from. So today we combined the Spring Beans with some gorgeous  beautiful Tomatoes.

Roasted Cherry Tomatoes Sauteed String Beans

  • String Beans:
  • A hand full of fresh string beans, trimmed
  • 1 tablespoon olive oil
  • 2 garlic cloves, chopped
  • Drizzle of soy
  • Salt and freshly ground pepper, to taste
  • Cherry Tomatoes:
  • A hand full of cherry Tomatoes
  • A few thyme or rosemary stems
  • Drizzle of olive oil
  • 2 garlic cloves, crushed
  • Salt and freshly ground pepper, to taste
  • Step 1 Preheat the oven to 450F.
  • Step 2 Toss the cherry tomatoes, herbs, garlic and olive oil into an oven pan. Season with salt and pepper, to taste.
  • Step 3 While roasting, toss them once, until tomatoes are blistered and begin to burst for about 25–30 minutes. Let cool.
  • Step 4 While the tomatoes are roasting, bring a large pot of water to a boil. Add an additional pinch of salt, 1 bay leaf and some olive oil.
  • Step 5 Cook the string beans for 8 minutes, then drain and set aside.
  • Step 6 Place the spring beans in a skillet over medium heat.
  • Step 7 Add olive oil, garlic and a drizzle of soy. Add the salt and pepper, to taste and stir. Continue stirring until the string beans are coated.
  • Step 8 Cook until tender for about 5 minutes.
  • Step 9 Combine them together and then sprinkle fresh chopped chives.
  • Step 10 The combination is mouthwatering and simple!
